Chewy Pumpkin Cookies

2 cups white or whole wheat flour ( or a combination )
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1 cup sugar
1/2 cup margarine
1 cup pumpkin
1 Tbsp. Grated orange peel

Heat oven to 375.  Stir together flour, baking powder, soda, salt and cinnamon; set aside.  Cream margarine and sugar; add
pumpkin and orange peel.  Mix well.  Add dry ingredients to pumpkin mixture, stir until well-combined.  Drop by rounded
spoonfuls 2" apart on ungreased cookie sheet.  Bake 8-10 minutes.

Note on the flour:  the recipe says you can use all whole wheat flour but I haven't tried it yet.  Some of my baking books
indicate you don't get ideal results when using all whole wheat flour.  I use a combination of both.  If anyone tries it
with all whole wheat flour let me know how they turn out!  I may try it soon.
